Seared Scallops

Preparation Time:  15 – 20 minutes

10-12 fresh scallops
2 tablespoon olive oil
1 tablespoon butter
2 cloves garlic
Salt and Pepper to taste
1/2 lemon
Fresh herbs Parsley or Chives, chopped

    1. Place a frying pan over medium heat and add olive oil.
    2. Once the pan is heated, carefully add the scallops. Cook each side for about 1 minute until they turn golden brown.
    3. Add butter and minced garlic to the pan. Continue cooking for an additional minute, allowing the flavours to meld.
    4. Remove the pan from the heat. Squeeze the juice from half a lemon over the scallops and generously sprinkle them with the fresh chopped herbs.
    5. And its ready to serve
