Breaded Scampi

Preparation Time: 15 – 20 minutes

20-25 prawns cut in half
1 cup plain flour/ all-purpose flour
2 eggs
2 cups breadcrumbs
1 tsp garlic powder, salt, black pepper and paprika
Vegetable oil for frying
Lettuce and lemon wedges

  1. Heat enough oil in a deep saucepan to cover the scampi.
  2. Place the saucepan over high heat.
  3. In a small bowl, beat the eggs with a pinch of salt.
  4. mix the plain flour and black pepper in another small bowl.
  5. In a third bowl, put the breadcrumbs for easier coating.
  6. Dip the scampi in egg, flour mixture, and breadcrumbs, shaking off excess each time.
  7. Once coated, fry them in the hot oil until they turn golden brown, about 1 to 2 minutes. Keep an eye on them.
  8. Use a slotted spoon to move them to a plate lined with two pieces of kitchen paper to drain excess oil.
  9. Serve immediately with your choice of side, like salad and chips. Lemon juice and cocktail sauce are great for dipping, especially as a starter.
